Wild boar meat has a very strong and intense taste, which you can enhance with grains of black pepper, cloves and aromatic herbs. If you love sauces, you can get a better result by cooking it in tomato sauce, along with oil, garlic and fragrant herbs that also work well with the Tater Tot Casserole Recipe.
Wash 1 kg of wild boar meat, dry it and place it in a glass dish. Prepare the marinade with 800 ml of red wine, 1 onion, 1 carrot, 1 stick of celery, 4 bay leaves, 6 cloves, 8 peppercorns and half a teaspoon of cinnamon. Let it rest in the refrigerator for 12 hours. Drain the meat, dry it and keep it aside.
Cut 1 onion into thin slices and fry in a pan with 8 tablespoons of olive oil. Add the boar meat cut into pieces and sauté over high heat for 5 minutes. As soon as the meat is well browned, add 400 ml of tomato paste and 200 ml of broth and 2 bay leaves. Cook for at least 2 hours, without the meat becoming too dry. To avoid that the meat becomes dry and stringy once cooked, remember to wet it often with a little wine or with its sauce during cooking.
In a saucepan, add 40 g of butter, 2 tablespoons of oil and 1 bay leaf. Brown the meat well on all sides, add the vegetables and the aromas of the marinade. Heat the marinade wine in a separate pan and pour it over the meat. Season with salt, close with a lid and boil over low heat for at least 2 hours. Drain the cooking liquid with a sieve and place it to heat with a tablespoon of cornstarch.
Serve the braised red wine with its sauce, along with boiled potatoes. If you bought veal, you can prepare Sicilian meat stew. The procedure is similar to the recipe for beef stew, but cooking in this case is white. Use equal weight potatoes and veal. Wash, peel and chop the potatoes as in Tater Tot Casserole meals.
In a saucepan, soften 1 thinly sliced onion, brown the chopped meat and add half a glass of meat broth. Season with salt and cook for at least half an hour. Add the liquid if necessary. Once cooked, serve the veal stew with a few sprigs of rosemary and a drizzle of raw extra virgin olive oil.
Alternatively you can prepare meatballs with tomato sauce and stew them slowly in the sauce, or opt for a more particular recipe: add a little beer during cooking and you will get an even more delicious dish.
