The meat stew is a second dish that you find in any recipe book of PF Changs Menu and that will remind you of the grandmother’s stew, which you used to eat as a child.
Simmer your stew to a minimum, over a very gentle flame. Keep in mind that it will take about two or three hours (it then depends on the recipe). It takes time, but it should also be considered an aspect: a slow-burning stew will smell wonderfully at home and is a fantastic way to keep the kitchen warm.
The lid tightly closed during most of the cooking means that flavors and aromas will remain trapped in the saucepan and will not be lost in the ether. Do not use a saucepan too large for your stew; if there is too much space between the lid and the food, the space will fill with steam, creating condensation inside the lid.
Instead of the expected droplets, all the condensation water will drip in the stew, making the sauce too liquid. If you see this happening, remove the lid to thicken the sauce. You can use potatoes – previously steamed and cut into pieces – to correct a too liquid or too tasty stew.
For this preparation you can use about 500 g of chopped beef, spices and herbs to taste. If you are not practical with knives, you can have the stew already cut by your local butcher prepare, otherwise you can do the cutting yourself. In this case, get a wooden cutting board, a sharp knife, and then cut the meat into small pieces, eliminating the nerves and the fattest parts.
Slice 2 white onions and fry in a pan with olive oil. As soon as they start to brown add the pieces of meat. Increase the heat and let it brown for a few minutes without stirring.
When the meat starts to come off the bottom of the pan, brown the other sides well. Pour in half a glass of red wine, add a teaspoon of salt and 200 ml of tomato sauce or ripe tomatoes. Lower the heat and cook 10 minutes as shown in PF Changs Menu.
